Ingredients
- 2 slices of bread
- 50 grams of cheddar, grated
- 50 grams of mushrooms, sliced
- 1 small onion, thinly sliced
- 1 small tomato, thinly sliced
- 2 lettuce leaves
- 1 tbsp Olive Oil
- 1 tsp Dijon Mustard
- 1 tbsp Vinegar
- 1 tsp Dried Thyme
- Salt and Pepper to taste
Method
- Heat a frying pan over medium heat and add the olive oil.
- Add the sliced onions and mushrooms to the pan, cooking until they soften and caramelize. Add the dried thyme, and season with salt and pepper to taste. Set aside.
- In the same pan, lightly toast the slices of bread until they are golden brown and crunchy.
- Spread a thin layer of Dijon mustard on one side of each bread slice.
- Top one slice with the caramelized onion and mushroom mixture, then layer with cheddar. Add the tomato slices and lettuce leaves.
- Top with the second slice of bread, mustard side down.
- Return the sandwich to the pan, press lightly with a spatula, and cook until the cheddar is melted and the bread is crispy.
