Ingredients

  • 2 slices of bread
  • 50 grams of cheddar, grated
  • 50 grams of mushrooms, sliced
  • 1 small onion, thinly sliced
  • 1 small tomato, thinly sliced
  • 2 lettuce leaves
  • 1 tbsp Olive Oil
  • 1 tsp Dijon Mustard
  • 1 tbsp Vinegar
  • 1 tsp Dried Thyme
  • Salt and Pepper to taste

Method

  • Heat a frying pan over medium heat and add the olive oil.
  • Add the sliced onions and mushrooms to the pan, cooking until they soften and caramelize. Add the dried thyme, and season with salt and pepper to taste. Set aside.
  • In the same pan, lightly toast the slices of bread until they are golden brown and crunchy.
  • Spread a thin layer of Dijon mustard on one side of each bread slice.
  • Top one slice with the caramelized onion and mushroom mixture, then layer with cheddar. Add the tomato slices and lettuce leaves.
  • Top with the second slice of bread, mustard side down.
  • Return the sandwich to the pan, press lightly with a spatula, and cook until the cheddar is melted and the bread is crispy.
  • Remove from the pan, slice in half, and enjoy your Ultimate Vegetarian Mushroom & Cheddar Melt!
