Serves: 2

Ingredients

  • 4 vegetarian sausages
  • 2 medium onions, thinly sliced
  • 50 grams of dairy-free butter
  • 400 grams of potatoes, peeled and quartered
  • 100 grams of peas
  • 500 ml of water
  • 1 vegetable stock cube
  • 2 tbsp of plain flour
  • 1 tbsp of olive oil
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 1 tsp of dried thyme
  • 1 tsp of dried rosemary

Method

  • Prepare the potatoes: Boil the potatoes in a pot of salted water for 15-20 minutes, or until tender. Drain and mash with dairy-free butter, salt, and pepper to taste. Keep warm.
  • Cook the peas: Boil the peas in water for 3-4 minutes, then drain and set aside.
  • Cook the sausages: In a frying pan, heat olive oil over medium heat. Cook the vegetarian sausages until browned and heated through, about 8-10 minutes. Keep warm.
  • Make the onion gravy: In the same pan, add a bit more oil and the sliced onions. Cook until the onions are soft and caramelized, about 10-15 minutes. Sprinkle in the plain flour and stir for a minute. Add the vegetable stock cube and water, stirring until the gravy thickens. Season with thyme, rosemary, salt, and pepper.
  • Assemble the dish: On two plates, serve the mashed potatoes with sausages on the side. Pour the onion gravy over the sausages and mash, and serve with a side of peas.

Tips

  • For a more intense gravy, add a splash of balsamic vinegar to the onions while caramelizing.
  • Ensure the vegetable stock cube is suitable for vegetarians and dairy-free.
  • For a creamy mashed potato, add a bit of dairy-free milk while mashing.
