Vibrant Chicken Fiesta with Carrot and Pepper Rice

Ingredients

  • 150 grams of chicken breast, sliced
  • 100 grams of rice
  • 50 grams of salsa
  • 50 grams of red bell pepper, diced
  • 50 grams of green bell pepper, diced
  • 50 grams of onion, diced
  • 2 cloves of garlic, minced
  • 1 medium carrot, sliced
  • 10 ml of olive oil
  • 1 gram of salt
  • 1 gram of black pepper
  • 2 grams of cumin
  • 2 grams of paprika

Method

  • In a medium-sized pot, bring 200 ml of water to a boil. Add the rice and a pinch of salt. Reduce heat and let it simmer for 18-20 minutes, until the rice is tender.
  • While the rice is cooking, heat 5 ml of olive oil in a large skillet over medium heat. Add the chicken slices and cook until they are golden brown and fully cooked, about 5-7 minutes. Remove chicken and set aside.
  • In the same skillet, add the remaining olive oil and sauté the diced onion and minced garlic until they are soft and fragrant, about 2-3 minutes.
  • Add the diced red and green bell peppers, and sliced carrot to the skillet. Cook for 5-7 minutes, until the vegetables are tender-crisp.
  • Return the cooked chicken to the skillet and add the salsa, cumin, and paprika. Stir to combine and cook for an additional 2 minutes to let the flavors meld together. Add salt and pepper to taste.
  • Once the rice is cooked, drain any excess water, and fluff with a fork.
  • Serve the chicken and vegetable mixture over a bed of rice. Garnish with additional salsa if desired.
