Ingredients

  • 500 grams Leg of Lamb
  • 3 cloves Garlic, minced
  • 1 Onion, finely chopped
  • 2 grams Cumin
  • 2 grams Coriander
  • 3 grams Paprika
  • 30 ml Olive Oil
  • 15 ml Lemon Juice
  • Salt, to taste
  • Black Pepper, to taste
  • 3 grams Dried Thyme
  • 2 grams Ground Ginger
  • 1 Bay Leaf

Method

  • Preheat the oven to 160°C.
  • In a mixing bowl, combine the minced garlic, chopped onion, cumin, coriander, paprika, olive oil, and lemon juice. Blend well to form a marinade.
  • Season the lamb leg with salt and black pepper before rubbing the marinade generously over the meat.
  • Place the lamb in a roasting dish, and scatter the thyme, ground ginger, and bay leaf on top.
  • Cover the dish with foil and roast in the oven for 1.5 hours, basting occasionally with the juices.
  • Remove the foil and increase the oven temperature to 200°C. Roast for a further 30 minutes to achieve a rich, golden crust.
  • Remove the lamb from the oven and let it rest for 10 minutes before carving.

Tips

  • For a deeper flavor, marinate the lamb overnight in the refrigerator.
  • Serve with a side of steamed rice or a fresh garden salad to complement the rich flavors of the lamb.
