  • 500 grams Mussels, cleaned and debearded
  • 2 Endives, sliced
  • 1 Leek, sliced
  • 2 Shallots, finely chopped
  • 100 millilitres Cream
  • 150 millilitres Belgian Beer
  • 25 grams Butter
  • 1 tablespoon Olive Oil
  • Pinch of Salt
  • Pinch of Pepper
  • 1 tablespoon fresh Parsley, chopped

Method

  • In a large pot, heat the olive oil and butter over medium heat. Add the shallots and leeks, and sauté until soft and fragrant.
  • Stir in the endives and cook for another 2 minutes until they’ve started to soften.
  • Add the mussels to the pot, followed by the Belgian beer. Cover with a lid and steam the mussels for about 5 minutes, until they open.
  • Remove the mussels with a slotted spoon and set aside, leaving the cooking liquid in the pot.
  • Lower the heat and stir the cream into the pot. Simmer until the sauce thickens slightly, then season with a pinch of salt and pepper.
  • Return the mussels to the pot, gently stirring to coat them in the sauce.
  • Sprinkle with fresh parsley and serve immediately.
