- 500 grams Mussels, cleaned and debearded
- 2 Endives, sliced
- 1 Leek, sliced
- 2 Shallots, finely chopped
- 100 millilitres Cream
- 150 millilitres Belgian Beer
- 25 grams Butter
- 1 tablespoon Olive Oil
- Pinch of Salt
- Pinch of Pepper
- 1 tablespoon fresh Parsley, chopped
Method
- In a large pot, heat the olive oil and butter over medium heat. Add the shallots and leeks, and sauté until soft and fragrant.
- Stir in the endives and cook for another 2 minutes until they’ve started to soften.
- Add the mussels to the pot, followed by the Belgian beer. Cover with a lid and steam the mussels for about 5 minutes, until they open.
