Dutch Leek and Apple Mustard Bake

Ingredients
- 150 grams of Leeks, sliced
- 1 Apple, cored and sliced
- 2 grams of Dijon Mustard
- 5 grams of Butter
- Pinch of Nutmeg
- Pinch of Salt
- Pinch of Pepper
- 10 grams of Gouda Cheese, grated
- 150 grams of Potatoes, thinly sliced
- 50 millilitres of Water
Method
- Preheat the oven to 200°C.
- Heat the butter in a skillet and sauté the sliced leeks until soft, about 5 minutes.
- Stir in the mustard, nutmeg, salt, and pepper, then add in the apples and water, cooking for an additional 3 minutes until the apples start to soften.
- Layer the sliced potatoes, leek and apple mixture in a small ovenproof dish.
- Sprinkle the grated Gouda cheese over the top.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is golden and the potatoes are tender.
- Remove from oven and let it cool for a few minutes before serving.
Tips
- For a crispier top, finish by broiling the dish for the last 2 minutes of cooking.
- Serve with a slice of rye bread to soak up the delicious flavors.
