Ingredients

  • 150 grams of Leeks, sliced
  • 1 Apple, cored and sliced
  • 2 grams of Dijon Mustard
  • 5 grams of Butter
  • Pinch of Nutmeg
  • Pinch of Salt
  • Pinch of Pepper
  • 10 grams of Gouda Cheese, grated
  • 150 grams of Potatoes, thinly sliced
  • 50 millilitres of Water

Method

  • Preheat the oven to 200°C.
  • Heat the butter in a skillet and sauté the sliced leeks until soft, about 5 minutes.
  • Stir in the mustard, nutmeg, salt, and pepper, then add in the apples and water, cooking for an additional 3 minutes until the apples start to soften.
  • Layer the sliced potatoes, leek and apple mixture in a small ovenproof dish.
  • Sprinkle the grated Gouda cheese over the top.
  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is golden and the potatoes are tender.
  • Remove from oven and let it cool for a few minutes before serving.

Tips

  • For a crispier top, finish by broiling the dish for the last 2 minutes of cooking.
  • Serve with a slice of rye bread to soak up the delicious flavors.
