Serves: 2, Difficulty: Expert

Preparation time: 20 minutes, Cooking time: 40 minutes

Ingredients

  • 4 eggs
  • 200 grams of red cabbage
  • 150 grams of white cheese
  • 50 grams of pickles
  • 200 grams of white rice
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of thyme
  • 1 pinch of rosemary
  • 20 ml of vegetable oil
  • 200 ml of water

Method

  • Start by thinly slicing the red cabbage and pickles. Set aside.
  • In a medium saucepan, bring 200 ml of water to a boil. Add the white rice, a pinch of salt, and reduce to a simmer. Cover and cook for 18 minutes, or until the rice is tender and water is absorbed.
  • In a large frying pan, heat the vegetable oil over medium heat. Add the red cabbage, and cook for 10 minutes until it becomes tender. Stir in the thyme and rosemary.
  • In a separate pan, cook the eggs to your preferred style: poached, scrambled, or sunny-side-up. Season with salt and pepper.
  • Combine the white cheese and pickles with the red cabbage, cooking until the cheese is just melted, about 2 minutes.
  • Plate the rice, and top with the cabbage and cheese mixture. Place the eggs over the top.

Tips

  • For a creamier texture, you can add a splash of water or milk to the eggs while cooking.
  • For added flavor, sprinkle a pinch of chili powder over the eggs just before serving.
  • Ensure your eggs are at room temperature before cooking to achieve the best texture.
