Serves: 2, Difficulty: Expert

Prep Time: 30 minutes, Cook Time: 60 minutes

Ingredients

  • 300g Chicken breast, thinly sliced
  • 2 cloves of Garlic, minced
  • 1 Lemon, zest and juice
  • 300g Potatoes, thinly sliced
  • 150g Green beans, trimmed
  • 150ml Milk
  • 50g Plain Flour
  • 100g Cheddar Cheese, grated
  • 50g Parmesan, grated
  • 2 tablespoons Olive Oil
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • Salt and Pepper to taste
  • 200ml Water

Method

  • Preheat the oven to 180°C. Lightly grease a baking dish with a bit of olive oil.
  • In a pan, heat olive oil and sauté minced garlic until fragrant. Add chicken slices and cook until slightly golden. Add lemon juice, zest, and season with salt and pepper. Set aside.
  • In a saucepan, heat the milk and water, and whisk in the flour to create a sauce. Add cheddar, parmesan, Dijon mustard, thyme, rosemary, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
  • Layer the potatoes and green beans in the baking dish, followed by the sautéed chicken. Pour the cheese sauce over the layers evenly.
  • Sprinkle a bit more cheese over the top and cover the dish with foil. Bake for 45 minutes, then remove the foil and bake for another 15 minutes until golden brown and bubbly.
  • Let the dish rest for 10 minutes before serving. This allows the flavors to meld beautifully and the gratin to set.

Tips

  • For a golden crust, use a combination of cheddar and parmesan for the top layer of the gratin.
  • Ensure the chicken is sliced thinly for the best integration with the potatoes and beans.
  • Let the gratin rest before serving to enhance the flavors and set the layers perfectly.
