Ingredients

  • 200 grams potatoes, diced
  • 200 grams sausages, sliced
  • 100 grams baked beans
  • 100 grams mushrooms, sliced
  • 2 eggs
  • 10 ml olive oil
  • Pinch of salt
  • Pinch of pepper
  • Pinch of thyme
  • 200 ml water

Method

  • Heat the olive oil in a skillet over a medium flame.
  • Add the diced potatoes and water. Cover and let it simmer for about 10 minutes until potatoes are tender.
  • Remove the lid and allow the water to evaporate, then add the sliced sausages and mushrooms. Cook until sausages are browned and mushrooms are tender, about 5 minutes.
  • Stir in the baked beans, and season with salt, pepper, and thyme.
  • Make two small wells in the skillet, and crack an egg into each.
  • Cover again and cook until the eggs are set to your liking, about 5 more minutes.
  • Serve hot, garnished with an extra pinch of thyme if desired.
