Ingredients

  • 200g Chicken, cut into bite-sized pieces
  • 1 Red pepper, sliced
  • 1 Red onion, sliced
  • 2 Garlic cloves, minced
  • 50g Tomato puree
  • 10ml Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Cinnamon
  • Water, as needed

Method

  • In a large pan, heat the olive oil over medium heat.
  • Add the chicken pieces and cook until golden brown.
  • Remove the chicken and in the same pan, add red onion, red pepper, and garlic. Sauté until the onion is translucent.
  • Return the chicken to the pan and add the tomato puree, salt, pepper, cumin, coriander, and cinnamon.
  • Stir in a small amount of water to keep the mixture moist and bring to a simmer. Cook for 15-20 minutes until the chicken is cooked through and the flavors have melded.
  • Adjust the seasoning to taste and serve warm.
