Serves: 2, Difficulty: Easy

Preparation Time: 15 minutes

Cooking Time: 30 minutes

Ingredients

  • 200 grams tomatoes, diced
  • 150 grams mushrooms, sliced
  • 100 grams vegan cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 200 grams spaghetti
  • 500 ml water

Method

  • In a large pot, bring 500 ml of water to a boil. Add a pinch of salt and the spaghetti. Cook until al dente. Drain and set aside.
  • In a large pan, heat olive oil over medium heat. Add mushrooms and sauté until golden and tender, about 5 minutes.
  • Stir in the diced tomatoes, salt, pepper, oregano, garlic powder, and onion powder. Cook until the tomatoes soften and release their juices, about 10 minutes.
  • Add the cooked spaghetti to the pan and toss to combine all ingredients. Cook for another 5 minutes.
  • Sprinkle the grated vegan cheese over the dish, cover, and let it melt for 2-3 minutes.
  • Serve hot and enjoy the North American flavors.

Tips

  • For a creamier texture, blend a portion of the tomatoes before adding to the pan.
  • Feel free to garnish with fresh parsley for a burst of color and flavor.
