Ingredients

  • 300g Lamb, diced
  • 2 Leeks, sliced
  • 200g Potatoes, cubed
  • 50g Cloudberries
  • 20g Rye flour
  • 1 tablespoon Olive Oil
  • 1 litre Water
  • 1 pinch of Salt
  • 1 pinch of Pepper
  • 1 teaspoon Juniper berries
  • 1 tablespoon Sour cream
  • 1 tablespoon Brown sauce
  • 1 teaspoon Fresh Dill, chopped

Method

  • In a large pot, heat the olive oil over medium heat. Add the lamb and brown on all sides.
  • Add sliced leeks and cubed potatoes to the pot, stirring to combine with the lamb.
  • Sprinkle the rye flour over the mixture, stirring to coat the lamb, leeks, and potatoes.
  • Pour in the water and add a pinch of salt, pepper, and juniper berries. Bring to a boil.
  • Reduce heat, cover, and let simmer for approximately 1 hour, or until the lamb is tender.
  • Meanwhile, in a small saucepan, combine cloudberries with a tablespoon of water and simmer until the berries break down to form a compote.
  • Stir the brown sauce and sour cream into the stew to thicken the sauce in the last 10 minutes of cooking.
  • Serve the stew with a spoonful of cloudberry compote on top and a sprinkle of fresh dill.

Tips

  • For a richer flavor, allow the stew to rest for 10 minutes after cooking to let the flavors meld.
