Serves: 2, Difficulty: Easy

Preparation time: 15 minutes

Cooking time: 15 minutes

Ingredients

  • 4 large eggs
  • 200 grams of baked beans
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chives, chopped
  • 200 ml water

Method

  • Heat a tablespoon of olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the tomato paste, paprika, and half the parsley, and cook for another 2 minutes until aromatic.
  • Pour in the baked beans and 200 ml of water, stirring to combine. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.
  • In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan, and stir gently to scramble. Season with salt and pepper.
  • Once the eggs are just set, gently fold them into the baked beans. Mix until both components are well combined and heated through.
  • Garnish with chopped chives and remaining parsley, and serve immediately.

Tips

– For a creamier texture, scramble the eggs over a low heat, stirring constantly.
– Adjust the spice level with a pinch of dried chili flakes if you prefer a hint of heat.
– Serve with a side of crusty bread to soak up the savory beans.
