South Asian Spinach and Pepper Rice Bowl

Ingredients

  • 200g Basmati Rice
  • 250ml Water
  • 100g Carrot, chopped
  • 100g Spinach, chopped
  • 100g Red Bell Pepper, sliced
  • 100g Sweetcorn
  • 2 tbsp Olive Oil
  • 1 tsp Sriracha
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • 1 tsp Ground Ginger
  • 1 tbsp Fresh Coriander, chopped
  • 1 tsp Salt
  • 1 tsp Ground Pepper

Method

  • Rinse the Basmati rice under cold water, then place in a medium pot with the water. Bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until the rice is tender and water is absorbed.
  • In a large pan, heat Olive Oil over medium heat. Add the Ground Ginger, Turmeric, and Cumin, then stir for a minute until the spices are fragrant.
  • Increase heat to medium-high and add Carrot, Red Bell Pepper, and Sweetcorn. Sauté for 5 minutes until vegetables are tender-crisp.
  • Stir in Spinach and Salt, and Pepper. Cook until the Spinach is wilted, about 2 minutes.
  • Incorporate the cooked rice and Sriracha, and stir until everything is well combined and heated through.
  • Garnish with fresh Coriander before serving.

Tips

  • Adjust the Sriracha to taste for a milder or spicier dish.
  • For a touch of citrus, add a squeeze of fresh lemon juice before serving.
