Ingredients

  • 2 medium potatoes (approx. 400g), sliced
  • 1 medium courgette (approx. 200g), sliced
  • 1 red pepper (approx. 150g), sliced
  • 150g mild cheese, grated
  • 200ml milk
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 tablespoon flour
  • 1 tablespoon margarine
  • 100ml water

Method

  • Preheat your oven to 180°C (350°F).
  • In a medium pan, heat vegetable oil over medium heat. Add sliced potatoes, courgette, and red pepper. Sauté for 5 minutes, until they start to soften.
  • In a saucepan, melt the margarine, then stir in the flour to form a roux. Gradually whisk in milk and water to form a smooth sauce.
  • Add salt, pepper, thyme, and rosemary to the sauce. Continue to whisk until the sauce thickens.
  • In a baking dish, layer the vegetables and pour the sauce over. Top with grated mild cheese.
  • Bake for 30 minutes, until the cheese is golden and bubbly.
  • Let it cool for a few minutes before serving.

  • For a crisper top, switch to grill mode for the last 5 minutes of baking.
