  • 500 grams canned tomatoes

  • 500 millilitres water

Method

  • Drizzle with olive oil and season with salt, pepper, thyme, and oregano.
  • In a saucepan, combine canned tomatoes, dried lentils, and water. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  • Pour the lentil and tomato mixture over the layered potatoes and leeks.
  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, until the potatoes are tender and the top is golden.
  • Remove from the oven and let cool for a few minutes before serving.

Tips
