Cooking Time: 10 minutes

Ingredients

  • 200 grams of noodles
  • 100 grams of tofu, cubed
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 100 grams of mushrooms, sliced
  • 10 grams of Thai basil leaves
  • 1 lime, juiced
  • 1 red chili, chopped
  • 20 grams of vegetable oil
  • 2 grams of salt
  • 2 grams of pepper
  • 2 grams of ginger (ground)
  • 100 ml of water

Method

  • In a pot, bring water to a boil, add the noodles and cook according to package instructions. Drain and set aside.
  • In a large pan, heat the vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove and set aside.
  • In the same pan, add the red bell pepper, carrot, and mushrooms. Stir-fry for about 3 minutes until the vegetables are slightly softened.
  • Add the chopped chili and ginger to the pan and cook for an additional minute.
  • Return the tofu to the pan, add the noodles, and stir to combine.
  • Season with salt and pepper, and add the lime juice.
  • Add the Thai basil leaves and stir-fry for another minute until the basil is wilted and aromatic.
  • Serve hot and enjoy your Thai noodle stir-fry.

Tips

  • For a richer flavor, allow the tofu to marinate in a mixture of ginger and chili for 15 minutes before cooking.
  • For an extra spicy twist, add a second chili or a touch of chili powder while stir-frying.
