Ingredients

  • 250 grams lamb, diced
  • 200 grams cabbage, chopped
  • 200 grams potatoes, diced
  • 100 grams carrots, sliced
  • 100 grams parsnips, sliced
  • 1 onion, chopped
  • 100 grams frozen peas
  • 2 tablespoons olive oil
  • 1 litre water
  • 2 tablespoons tomato paste
  • 1 beef or lamb stock cube
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Method

  • Heat the olive oil in a large pot over medium heat. Add the diced lamb and sear until browned on all sides.
  • Remove the lamb and set aside. In the same pot, add the chopped onion and sauté until translucent.
  • Add the carrots, parsnips, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.
  • Return the lamb to the pot. Add the tomato paste, thyme, rosemary, salt, and pepper. Stir to combine.
  • Add 1 litre of water and the stock cube. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour.
  • In the last 10 minutes, add the chopped cabbage and frozen peas. Cook until the vegetables are tender.
  • Check the seasoning, adjust if necessary, and serve the stew hot.

Tips

  • For a richer flavor, allow the stew to simmer longer to let the lamb become tender.
  • Serve with a slice of rustic bread to soak up the flavorful broth.
