Ingredients
- 100 grams of vegetarian sausage
- 100 grams of parsnips, peeled and chopped
- 50 grams of cabbage, chopped
- 50 grams of peas
- 100 grams of swede, peeled and chopped
- 50 grams of onion, sliced
- 1 tablespoon of olive oil
- Pinch of salt
- Pinch of pepper
- Pinch of thyme
- Pinch of parsley
- 100 ml of water
Method
- Preheat the oven to 180°C.
- In a large ovenproof pan, heat the olive oil over medium heat.
- Add the sliced onion and sauté until translucent.
- Add the chopped parsnips and swede, and cook for 5 minutes.
- Pour in the water and add the salt, pepper, thyme, and parsley. Stir to combine.
- Stir in the peas and cabbage, then place the vegetarian sausage on top of the vegetables.
- Transfer the pan to the preheated oven and bake for 20 minutes or until the vegetables are tender and the sausage is heated through.
- Garnish with fresh parsley before serving.
Tips
– For an extra flavor kick, add a splash of vinegar or a teaspoon of Dijon mustard before serving.
